Dumb questions, why would you not just install SQL on 2008 Enterprise edition in a cluster? and what differences would there be if you used 2008 Enterprise edition in the screencast?

Not dumb at all. You do need Windows Server 2008 x64 Enterprise Edition for the head nodes to be clustered. Sorry if it was not clear in the screencast. On the other hand, SQL 2005 x64 Standard Edition is sufficient for a 2-node fail-over cluster.
